The Mighty Caprese Salad

One of the best salads In. The. World! This guy is allll about the quality products. Buy a great olive oil and fresh buffalo mozzarella. Basil and tomatoes must be at their peak and above all everything should be room temp to allow the flavours to sing! This salad is perfect at just about any time but currently its my fave to serve up with focaccia bread and a big plate of mortadella as an early evening aperitivo.

Ingredients

(serves 4)

300g buffalo mozzarella, torn into large chunks

300g mixed variety tomatoes, halved or quartered - the more colourful the better here

2 cups of picked basil leaves

1/4 cup really good olive oil

Sea salt & pepper

Prep It

Make sure your cheese and tomatoes are at room temperature when you want to serve so get it out of the fridge in advance!

Roughly tear mozzarella into large chunks. Cut large tomatoes into quarters and halve small tomatoes. Feel free to even keep some whole. The different cuts is so visually appealing as you eat with your eyes first team! Pick basil leaves and you are good to go!

Serve It

You can pretty much get as arty as you like here and I often change it up but right now Iā€™m all about the 3 solid piles of ingredients. Drizzle over olive oil and season liberally with sea salt and pepper!

Eat It!

with freshly baked focaccia bread and a big pile of mortadella - the ultimate dinner in my eyes!
