Mozzarella Broccolini Salad

with Toasted Walnut oil & Balsamic Glaze

See I don’t just eat carbs…. as long as it has cheese!

This fresh guy is smothered in balsamic glaze and freshly toasted walnut oil and is as easy as it is impressive!

Ingredients

(Serves 2 -4 depending on situation)

1 big ball of fresh mozzarella or burrata

500g broccolini

2 cloves garlic, thinly sliced

2 Tbsp water

1/2 cup walnut halves

1/4 cup olive oil

1/2 tsp salt

2-3 Tbsp balsamic glaze

mint & basil leaves to garnish, lots, freshly picked

Cook It - There’s no prep!

Preheat oven to 220°C.

Get your mozzarella ball out to come up to room temperature for best flavour results!

Thinly slice garlic and toss on a lined oven tray with broccolini, water (this helps it steam cook faster), a good drizzle of olive oil and salt and pepper. Bake in oven for about 10 minutes, until tender and charred.

While broccolini cooks make your walnut oil. Place walnuts, olive oil measure and salt in a small pot on medium heat. Cook for about 5 minutes stirring often, until walnuts are golden and smell fragrant. Watch carefully while you do this it could take less time and the walnuts will continue to cook when off the heat. Once toasted remove from heat and set aside for serving.

Serve It

Place mozzarella/burrata in the center of your serving plate. Arrange broccolini around and drizzle over balsamic glaze. Spoon over your walnut oil (allllll that oil) and sprinkle over fresh herbs. Generously season the mozzarella with flakey sea salt and pepper.
